This peach and blackberry spritz is a great happy hour sip to cool off with or even for a late summer brunch! I tend to stay away from ordering spritz cocktails because they usually don’t have much flavor to them, but I love the ones I make at home (especially this one)!

Muddle the blackberries, mint, honey, gin, and elderflower liqueur together until well broken down. Then add the peach juice/purée and shake to combine. Strain into a large spritz glass and fill with ice and top with chilled sparkling water (or prosecco for more bubbles and sweetness)! Garnish with fresh blackberries and a sprig of mint and enjoy!
