Homemade Simple Syrups for Cocktails

To make the Honey Simple Syrup, combine 1 cup water and 1 cup honey in a small saucepan. For Rosemary Ginger Simple Syrup, combine 1 cup water, 1 cup honey (or sugar), 6 to 8 rosemary sprigs, and 2 inches of peeled and sliced fresh ginger. For Spicy Jalapeño Simple Syrup, combine 1 cup water, 1 cup honey (or sugar), and 3 sliced and seeded jalapeños. For all syrups, add the respective ingredients into a small saucepan over medium/high heat until it begins to simmer. Carefully remove from heat and let stand for another 10 minutes or so to cool. Pour into glass bottles or airtight containers and store in the fridge for up to a week.
